COCO-AI aims to develop an AI-optimised plant cell culture platform for the sustainable production of high-value bioactive compounds, using cocoa as a demonstrator system. The project integrates artificial intelligence, multi-omics, imaging technologies, and bioprocess data to optimise cultivation conditions, accelerate process development, and reduce production costs.
The project will scale production from laboratory level to 10,000 L bioreactors and develop innovative secondary metabolite formulations, food prototypes, open-source AI tools, and standardised methodologies supporting sustainable bioeconomy development.

The project will deliver an AI-driven platform for sustainable plant cell culture production, validated scale-up protocols, and innovative bio-based product prototypes.
