Development of berry pulp biorefining technologies for designing and commercialization of innovative products

Project description:

The aim of the project is to intensify the activities of the KTU Food Science and Technology Center of Competence for the development, testing and commercialization of berry pomace biorefining technologies, creating innovative fiber products and applying them to improve the nutritional value of food products and provide additional health benefits. After consistent application and research of the complex extraction and enzymatic processing processes of fiber materials from berry pomace, three fiber products with different properties will be created, purposefully selected depending on their use in food or beverage production. The planned result of the project is the submission of three patent applications.
