Annotation:
One of the basic raw materials for malt production are malting cereals (barley and wheat), the quality and safety of which is of primary significance. Grain storage condition, safety and optimal germination performance, such as germination capacity, are definitely one of the most important quality criteria’s for malting grains. The aim of the thesis was to development of fast and efficient methods for the detection of Fusarium spp. contaminated malting cereal grain and assessment of possibilities of detoxification of Fusarium spp. contaminated cereal grains with such antifungal bio agents as LAB bio products and ozone.
